Blueberry Pancakes

Stonewall Kitchen Pancake MixAfter numerous tastetests of premade pancake mixes, I’ve found that Maine purveyor Stonewall Kitchen makes the best pancake and waffle mix in the country.

The mix is smooth and flavorful and, most importantly, simple to make.

Follow the directions for one cup of mix and add half a cup of blueberries — fresh if in season, frozen if not.

Drop roughly half a cup onto a griddle at 350 degrees for roughly 90 seconds per side.

Pour copious amounts of maple syrup on top.

Of course, you can make pancakes from scratch — one day I’m sure I’ll post a recipe — but for those who want a quick, easy and delicious alternative I highly recommend this option!
